I’ve told you all many times casseroles are probably my favorite thing to make and breakfast casseroles fall right into that same category. Why are casseroles my favorite? Why not really?? You literally can throw anything into a casserole and it tastes good.

When it comes to making your low carb breakfast casserole, the base for it is eggs, then you can get as fancy as you want. A lot of traditional egg casseroles have bread or potatoes in them, but let me tell you, you don’t miss them at all!

  • Breakfast Sausage – Ground breakfast sausage is what most people like, but Italian sausage works great too.
  • Cheddar Cheese – I chose to use shredded cheddar cheese, but you can use another kind if you prefer.
  • Baby Spinach – Be sure to use fresh spinach, not frozen.
  • Onion – If you are on keto then stick to only a ¼ cup, otherwise you can up the amount to ½-¾ cup depending on how much you like onions.
  • Spices – Salt, pepper, and chopped garlic.

Best Sausage for Breakfast Casserole

Any ground sausage that is labeled as “breakfast sausage” would be the most classic choice to use in this recipe.

However, there is absolutely nothing wrong with using Italian sausage instead, in fact, I’ve done that several times because that’s what I had on hand and I loved the way it came out just as much.

Step 3: Add the ground sausage, onions, and garlic to a cast iron pan or frying pan. Cook on medium heat.

In my oven, a breakfast casserole takes exactly 25 minutes to be cooked to perfection. However, keep in mind ovens are different so I recommend checking it at 20 minutes.

For this EXACT gluten-free breakfast casserole the best pan to use is a glass or ceramic 8×8 or 9×9 pan. You can use a large pan, but it will end up being a much thinner keto egg bake.

If you decide to use a larger pan then what you should do is up the amount of eggs. If you use a 9×13 baking dish then use about 12 eggs instead.

  • Dairy-Free: I used heavy cream mixed in with the eggs, but you can replace it with almond milk instead. Also, you need to omit the cheese completely or replace it with vegan cheese.
  • Vegetarian: As you see we put sausage in this low carb breakfast bake, but you do not need to add any meat at all. Load up on the veggies!
  • Paleo: Again it’s the heavy cream that doesn’t make this quite paleo, so use almond milk instead.

  • 12 oz ground breakfast sausage or Italian sausage

  • ½ tsp salt
  • ½ tsp pepper
  • 2 cups baby spinach
